Chocolate Cake

Ingredients:

For the cake:

  • 1 3/4 cups (220g) all-purpose flour
  • 1 1/2 cups (300g) granulated sugar
  • 3/4 cup (65g) unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs, at room temperature
  • 1 cup (240ml) whole milk, at room temperature
  • 1/2 cup (120ml) vegetable oil
  • 2 tsp vanilla extract
  • 1 cup (240ml) boiling water (or hot coffee for extra richness)

For the frosting:

  • 1/2 cup (115g) unsalted butter, at room temperature
  • 2/3 cup (55g) unsweetened cocoa powder
  • 3 cups (360g) powdered sugar
  • 1/3 cup (80ml) whole milk
  • 1 tsp vanilla extract
  • Pinch of salt

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper circles.
  2. Mix the dry ingredients: In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
  3. Add the wet ingredients: Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Use an electric mixer (or whisk by hand) to beat on medium speed for about 2 minutes until the batter is smooth.
  4. Add the boiling water: Gradually add the hot water (or coffee) to the batter, mixing until the batter is thin but smooth. The batter will be quite liquid—this is normal!
  5. Bake: Pour the batter evenly into the prepared pans. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool: Let the cakes cool in the pans for about 10 minutes before turning them out onto a wire rack to cool completely.

For the frosting:

  1. Melt the butter: In a medium saucepan, melt the butter over medium heat. Once melted, stir in the cocoa powder and cook for about 1 minute.
  2. Add the sugar and milk: Gradually whisk in the powdered sugar, alternating with the milk, until the frosting is smooth and creamy. Add the vanilla extract and a pinch of salt.
  3. Cool slightly: Let the frosting cool for a few minutes before spreading it on the cake.

Assemble the cake:

  1. Place one cake layer on a serving plate and spread frosting over the top.
  2. Add the second layer of cake, and frost the top and sides with the remaining frosting.

Optional:

  • Add sprinkles, chocolate chips, or even crushed candies for extra flair.
  • For an extra indulgent touch, drizzle some melted chocolate over the frosting.

Enjoy your homemade chocolate cake!
